Similarly, reduction (cooking) is a process of evaporating liquids from a solution to produce a "reduced" food product, such as wine reduction.
EvaporationEvaporation is a type of vaporization that occurs on the surface of a liquid as it changes into the gas phase. High concentration of the evaporating substance in the surrounding gas significantly slows down evaporation, such as when humidity affects rate of evaporation of water. When the molecules of the liquid collide, they transfer energy to each other based on how they collide. When a molecule near the surface absorbs enough energy to overcome the vapor pressure, it will escape and enter the surrounding air as a gas.

Air source heat pumpAn air source heat pump (ASHP) is a type of heat pump that can absorb heat from outside a structure and release it inside using the same vapor-compression refrigeration process and much the same equipment as air conditioners but used in the opposite direction. Unlike an air conditioning unit, most ASHPs are reversible and are able to either warm or cool buildings and in some cases also provide domestic hot water. In a typical setting, an ASHP can gain 4 kWh thermal energy from 1 kWh electric energy.
DesalinationDesalination is a process that takes away mineral components from saline water. More generally, desalination refers to the removal of salts and minerals from a target substance, as in soil desalination, which is an issue for agriculture. Saltwater (especially sea water) is desalinated to produce water suitable for human consumption or irrigation. The by-product of the desalination process is brine. Desalination is used on many seagoing ships and submarines.
Absorption refrigeratorAn absorption refrigerator is a refrigerator that uses a heat source (e.g., solar energy, a fossil-fueled flame, waste heat from factories, or district heating systems) to provide the energy needed to drive the cooling process. The system uses two coolants, the first of which performs evaporative cooling and is then absorbed into the second coolant; heat is needed to reset the two coolants to their initial states. The principle can also be used to air-condition buildings using the waste heat from a gas turbine or water heater.

Cooling towers may either use the evaporation of water to remove process heat and cool the working fluid to near the wet-bulb air temperature or, in the case of dry cooling towers, rely solely on air to cool the working fluid to near the dry-bulb air temperature using radiators.
Shell-and-tube heat exchangerA shell-and-tube heat exchanger is a class of heat exchanger designs. It is the most common type of heat exchanger in oil refineries and other large chemical processes, and is suited for higher-pressure applications. As its name implies, this type of heat exchanger consists of a shell (a large pressure vessel) with a bundle of tubes inside it. One fluid runs through the tubes, and another fluid flows over the tubes (through the shell) to transfer heat between the two fluids.
